做法一:黄瓜洗净,削去外皮,用刀拍碎,边拍,边旋转黄瓜,拍成四大条。切成碎块。装入盘中,加入盐、蒜泥(根据情况可不加,吃后要含几根茶叶除味)、葱 姜粒、少许白糖、白醋(有人更愿意用陈醋)、几滴香油,搅拌匀。一盘清凉翡翠菜就做好了。据我个人经验,此菜的关键之处是黄瓜的切法和醋的加量。
做法二:黄瓜洗净后,前下方垫一筷子,边旋转边切片,注意,不要完全落刀,切到筷 子即停刀。这样切出的黄瓜,可拿住两端向外拉伸。放入盘中,撒上糖(大量)、醋、盐,葱、姜,热油离火后,趁热加入辣椒末,倒在黄瓜上。口味酸甜香辣,食欲大增。
