贵州牛瘪,不知有没有人试过?
牛瘪,又被称为“百草汤”,是黔东南地区独特的一种食品,深受侗族苗族人民喜爱,被黔东南少数民族视为待客上品。“牛瘪”的制作工序复杂,人们将牛宰杀后,把牛胃及小肠里未完全消化的内容物拿出来,挤出其中的液体,加入牛胆汁及佐料放入锅内文火慢熬,煮沸后将液体表面的泡沫过滤后食用。
