默认 配方

面筋粉 (gluten flour) 200克
温水300毫升(我是称的300克)
快速酵母(instant yeast) 1 tsp
1/2 -1 tsp 糖
1/8 tsp 盐 (涅一点点即可), 这个是我自己加的,找来的方子里都没有。我觉得加点点盐不会发的过大,回缩也不会太厉害。

面筋粉+酵母+糖+盐拌匀,然后一下子把水倒进去,迅速用叉子或筷子搅(一定要一下倒入,这是第一个窍门哈)。很容易就搅成团了,不用揉。分几份放在parchment paper上直接搁蒸锅里发酵(我是在蒸锅里加上热水,然后放上笼屉跟那儿发,没留意时间)。发起来后蒸。水开了蒸十几20分钟。蒸完别开盖子,等一会儿再开,我等快凉了才开的(第二个窍门儿)。会缩下去点儿,不过里面还是发得很好的。
