默认 再问压面机

再次试了压面机,这次用了sunnie的方子,两个鸡蛋两杯面,加了两勺水,面比较硬,压出来像个面条样子了,真不错。还想问问,面条放在那里事件略长之后还是有点沾,是不是压出来要分开挂着晾干还是说我还是面太软?

要保存稍久的话,是放在冷藏还是冷冻?
我都是做完马上下。不管面多硬,都会变软,冷藏冷冻都不可行,除非晾成干面条。

面条做好后,撒生粉(不是面粉),可以防粘,而且下锅后水不易浑.

速冻。 分小份用保鲜膜隔开放,扭到一起都不怕。吃的时候直接把冰冻的面条下到沸水里,马上用筷子拨拉开。

时间放的长就等于继续在饧面,面是越饧越软的,越软就越粘。咱们这个鸡蛋面配方够干,不需要往面条里撒粉,面汤清清的,面条又筋斗,又滑溜,做拌面都不需要用凉水浸。

现吃现压呀, 家有压面机图的就是这个方便劲儿. 不吃了, 就把面团起来存冰箱冷藏室里, 次日拿来揉揉再压来吃, 面还一样筋斗.

水太多了吧,基本上是面包机成不了面团那么干才行,我通常是1杯面1个鸡蛋加1汤匙水。

上面说的都对,我来总结一下:.压面之前,首先要活面,和面时,一手端一碗水,另一只手拿一双筷子或者直接用手活面,切记边倒水边搅面,而且水要一点一点的倒,不要一下都倒进去。具体多少水,主要是经验,想面软一点,就稍微多一点,想要面硬,少放点水。我的经验是,等面变成面穗时就可以了。如果是以前那种大个带有放面穗槽那种压面机,直接用面穗就可以压了。关键是我们买的都是那种家庭用的很小那种,所以还要把这些面穗团在一起,然后再分成几等份,把每等份用手压扁,然后再上压面机。第一次用最厚那一档,然后选择自己的薄厚,如果面较软,可在最后一遍成形时洒一点玉米面粉。最后采用细刀成形自己的面条。一次吃不完,可冷冻起来。

至于放不放鸡蛋,盐,我觉的没必要,当然放鸡蛋要好吃一些,筋道些。至于盐,没必要。这又不是扯面,要放盐。还有一般也没必要醒面,如果做拉面,扯面,或者是手擀面,一般放些盐,水也相对于压面多一些,并醒面半小时。

上面你说还有些粘,就是面没有活好,水多了。
理论永远是灰色的,还是实践之树常青,多试几次就好了。

你是不是有睡午觉了?

还是水多了,水多了就不能饧那么长时间,
3杯粉我只用大概3/4杯水,应为水放的少,面十分硬,不饧面根本揉不动面团。
我的硬面方子,是靠饧使得面水均匀,而不是靠揉。面包机揉的软的面是不能饧4个小时的。

我喜欢硬的面,一个好处是压面时不用再扑干粉,机器周围保持清洁又不浪费粮食,二是硬面口感好。
加鸡蛋加盐,一个是加了营养,二是口感筋斗,3是做冷面,拌面非常方便,水里捞出来马上可以拌,不须用冷水冲,不须先蒸,不须用专做冷面的扁面条做冷面(再说这里也没有卖扁面条的),面条之间不会粘。

如果不是鸡蛋面,我极力建议加盐,即使面条里不加,煮面时也要在水里加些盐,防止面条粘糊很有效。西菜师傅煮pasta都是要加点盐的,口感好很多,pasta比咱们的切面可是干得多了,这都要加盐。

对,是饧面,中国字都不会写,还在这叽叽歪歪。,上面说的咱完全赞同,至于饧面是否,饧一会也行,筋到嘛!但咱偷懒,省了。但是如果面活的较软,就不要饧的时间长了,不然粘糊!放盐嘛,除了做扯面,擀面,刀削面咱放过,压面还真没放过,主要是老一辈也没放过。下一次咱也放一点,盐嘛,总不是坏东西。

我比例不精确,但3:1应该差不多了。我说醒面是做包子,面条不用醒面。面包机和的面不能在外面放,不要说4小时,超过半小时就完蛋了。我通常是和好面放冰箱,吃的时候再压面,放冰箱也会变得软一点,但能对付,放一两天没问题。
