“靠山吃山,靠水吃水”是乡土饮食文化的一大特点。

乡村家庭炉灶通常是有什么烹什么。它取材方便,就地施烹,鲜美异常。在中国,逶迤绵延的崇山峻岭甚多,栖息在山岭之间的村民自然要“靠山吃山”。山野之中无奇不有,小者如山鸡,斑鸠、野兔、蛇及至蛙类,都是山村乡民举手可得的家常便菜。

例如在福建南山区生长着一种蛙类名叫石鳞,在江西著名的风景旅游胜地庐山地区的溪流、深潭畔石下也出产一种蛙类名叫石鸡。这些蛙类不仅肉质细嫩,味道香醇鲜美,而且有很好的滋补功效。

山区村野的饮食,除了飞禽走兽一类的荤菜,还的漫山遍野生长着的素菜,尤其是菌类植物,如野生的蘑菇,木耳、香覃等就是山村之民做菜的好原料。这些长于山间的野菜,菌菇也早为城里人所垂涎。

中国内地,江河纵横,湖泊遍布,衍生千奇百怪的水动植物,对各地村民的饮食生活带来了许多益处。那些著名的淡水鱼如黄河鲤鱼,长江刀鱼,富春江鲥鱼,松江鲈鱼,竹溪娃娃鱼等,对于当地乡民来说,食以为常,不以为奇,还有其他种类的水鲜,常为当地之民桌上佳肴,如田螺、虾蚌、蟹等,此外菱、藕、莲子等水生植物也是靠水吃水的村民的钟爱之物。

此外,在中国游牧、畜牧业发达的地区,丰富的牛羊肉是少数民族的主要食物原料。他们在长期的生活实践中创造出的一些较特殊的烹饪方法和带有浓烈民族风味的肉、奶食品,迄今仍然受到广大牧民的喜爱和欢迎,这其中就有不少清真食品。在奶制食品中,中国少数民族制造、加工,饮食奶制品的经验尤其显得可贵,它丰富了中国饮食文化的内容。如蒙古族的奶豆腐、奶酥、哈萨克族的马奶酒,藏族的酸奶子和奶渣等。这些民族的独特饮食风貌,在中国饮食文化中占有特殊重要的地位。

“自然本味”是开发乡土菜应遵循的原则。


乡土菜的独特风味与市肆菜馆、酒店的精工细作是有相当大的差别的。而身居市肆间,庙堂上的富人达官司偶一食之,往往赞不绝口,广传天下,遂使本来默默无闻的乡土菜骤然身价百倍,名扬天下。苏东坡在《菜羹赋》里赞曰:“煮蔓菁、芦菔、苦荠而食之,其法不用醯酱,而有自然之味”。乡土菜点使用的是土原料、土烹制、土成品、土吃法,确实有独特的乡土气息,这乡土气息就是自然本味的一种表现形式。常常可以看到,一些黄发蓝眼者在马路边大吃烤白薯,住宾馆上街吃大排档、愈土的对他们来说愈洋,而外籍华人对传统的乡土风味更是徘徊不以、回味再三。但是自古及今有多少乡土风味菜点随着时代的更替而无法传承下来。古代普通乡村居民的饮食烹饪生活、一般不可能见于经典,这对于了解历史上的民间乡土菜的制作状况带来了一些困难。我们只能从文人记载的只言片语中窥视古代乡土菜的菁华。



在当今都市饮食生活十分丰富的时期,食品工业化高度发展,人们更加追求健康食品,所以饮食又开始大唱“返璞”、“回归”、“自然”的口号,而开发乡土菜正是在这股饮食潮流下被大众欢迎和重视的。游客千里迢迢来到此地就是想领略一下从未吃过的“异味”。常看到一些大的酒店,还开辟一个“乡土风味餐厅”或“村野风味食街”,其装潢设计也颇具匠心,这种构想与布置就是为了给就餐者一种身临其境的联想,一种身在乡间田野的感觉,一种精神上的享受。在当今人们的食风越吃越高级的同时,也同时显现着越吃越原始,人们在崇尚自然希望能回归自然的同时也着迷于自然本味。



咸宁市郊桂花镇老刘酒店是一家专营咸宁乡土菜的酒店,他们十多年来从民间发掘出不少具有咸宁独特乡土气息的菜点,如今都已成为其招牌菜,如干豆角蒸腊肉、麦酱肉、苦菜汤、腊蹄煮泥鳅、烧腊野猪肉、合面,锅巴粥等,用到的原料皆是咸宁特产,其中有些配料为咸宁独有。近几年来老刘酒店的乡土菜越卖越旺,不少外地人慕名前来,只为吃一口麦酱肉。



腌菜、酱菜、泡菜、酸菜已成为当今餐厅饭桌上的常品,豆鼓、豆酱、甜酱、辣酱、腐乳早为饭店厨房不可或缺,而皮蛋、糟蛋、醉蛋、凤鸡、腊肉、香肠、醉蟹、咸鱼等,已成大师傅手中喜欢的品种。从乡土菜中吸取营养,有价值的东西为我所用,是摆在当今厨师手中的一份试卷。我国历代厨师就是在乡土饮食的土壤中吸收菁华的。如带有乡土特色的扬州蛋炒饭、四川回锅肉等等就是源自民间,扬名海内外。

烧白豆花










平素里人们口中所称的烧白,一般都指咸烧白。

在遍布三街六巷的大小酒店里,它与豆花是人们下酒与送饭的绝配。对于资格老道的善吃者来说,一盘芽菜烧白,一碗河水豆花,二两杂粮老酒,酒肉先行,烧白、豆花与米饭殿后,不啻是神仙的口福。


烧白用以打底的材料,川人向以芽菜为正宗,认为其品味远远高于天津与沧州的北冬菜、内江与资中的川冬菜,和粤闽一带的客家梅干菜,以及江浙的土产霉干菜。而芽菜之所产出者,放眼天下,又以宜宾为最佳。

说起“宜宾芽菜”,就如言及“涪陵榨菜”一般,是人们耳熟能详的地方名产。
正因为宜宾盛产芽菜,此间的烧白也就当仁不让,顺便占尽了地理之利,情不自禁地都要高于外地几分,早在宋朝之时便有了美名,称为“戎州烧白”。

五花肉焯水后捞起,在肉片一面趁热抹上白糖和少许酱油


炒锅里放少许油,烧热,火关小,然后把抹好汁的肉轻轻放入锅中,记住肉皮朝下,盖上锅盖。
听锅里劈哩拍啦的一阵乱炸……





小贴士:

建议一手拿肉,一手拿盖,温柔地轻放,以迅雷不及掩耳之势,大叫一声盖上锅盖

身手要敏捷,不然油溅到脸上就毁容了……

扣的时候一定要压紧,翻的时候用手腕的力道,迅速完成,不然肉汁飞溅,狼狈不堪……

说到豆花,就想起一个贴子:某同学在北美想吃点豆花的趣事

豆花在家乡不是什么稀奇菜,想吃就可以吃到。到了异乡,却成了稀罕物。



“河水豆花”是旧时没有自来水的情况下,以无污染的河水推制的豆花,它比使用井水、塘水、湖水、味更美,质更佳。而今虽已改用自来水,但“河水豆花”之名却流传至今。

小时候,常常吃到清冽江水制作的豆花,鲜甜可口,不加任何作料,都可以热腾腾的来两碗

还记得帮大人用那种很高很大的石磨碾推豆子的情景,现在的环境污染日趋严重,河水豆花已成追忆。

豆花的最大特点就是细嫩绵扎,溢出盛器而不流,白如雪,软似棉,口感好

一讲求选料,大豆一定要新鲜,饱满

二讲求泡制到家,水温合适,时间适宜

三讲求作料,品种齐,份量足。主要有:油辣椒、花椒面、鲜尖椒碎、大蒜茸、老姜汤、熟菜油、芝麻粒、花生炒黄豆、调味盐、味精、榨菜粒、小香葱、香菜

四讲求感受,现在流行自己去打调盒,用时兴的话讲就是豆花饭DIY。

如何点豆花?



1.将干黄豆用清水浸泡4小时,捞起换清水入石磨磨成浆,用纱布过滤去渣。滤出的豆浆倒入锅内煮沸后慢慢冲入胆水,边冲边用勺子轻轻来回搅动,待豆花凝成,改用微火保持沸而不腾,煮约5分钟,然后用纱布铺其上,用笛箕略挤压,即成豆花。

2.大炒锅置火上,放熟菜油烧至四成热,下人剁细的豆瓣、豆鼓,煵香上色。投入辣椒粉、花椒粉、酱油炒匀起锅,入碗中,再放入芝麻酱、川盐、味精搅匀成调味汁。

3.将豆花舀入大汤碗内,按每人一小碟调味汁配上,上席前,小碟调料要撒上葱花、香菜。





〔工艺关键〕

1.这里,制作豆花的凝固剂有两种:一种是用生石膏,另一种是盐卤(也称胆巴)。用石膏冲制的豆花色白细嫩,适宜作“糖豆花”、“酸辣豆花”;而“河水豆花”则最好用盐卤冲制。因为盐卤豆花绵而有劲,成形较好。

2.味汁的调制是作“豆花”的重要一环。可按食者所好巧配而成。

卖豆花的馆子一般都不大,里面四、五桌,院子两三桌

门口挂个小黑板,上面歪歪斜斜地用白粉笔写着“豆花”“烧白”

当然,除了这两道主菜,吃客也可以点其他炒菜,非常的家常。。。。。。

虽然不能和河水豆花相比,却也足以慰籍思乡的胃
