You should stay at Trois Reveiere, to watch the sunset. Rimoski is a place you should stay, as not far from it, there is a place to can go with wood bridge to walk along the mountain, and down the canyon. Go to the tourist office at Rimoski, and ask for the place.

Drive along St Lawrence River, stay at bed and breakfast, and you can even take a boat tour to see whales, if within season.

Spend more time in Quebec province, as it is much more beautiful than New Brunswick or PEI, with its mountains and beaches, as well as national parks. There is nothing much in PEI, except the beaches, and the Confederation Bridge. You may even want to drive all the way to the east, Gaspe, and then back down to NB.
