请问:有人知道雪螺肉怎么煮来吃吗?我试过用焖的方法,又试过清抄,可不是太老了就是好像生的,吃的时侯好像不入味的

qiuyue做好吃的呐,我不知道雪螺是田螺还是海水螺.
如果是河螺呢,应该是和田螺一样有土腥的气味.我是这样做的:
烧开水,螺肉放进去飞水,一般是等水再次翻花后半分钟,就马上捞出来,不然会硬.
然后锅里热油,放多点花椒,大量的葱姜蒜爆锅,放豆瓣酱,然后放螺肉爆炒,加酒,翻炒几分钟就出锅,不然会硬.
放葱姜料酒是去土腥的,因为有了豆瓣酱,就不用放盐了,味精方不放都可以.

如果是海螺呢,我的做法是这样:
烧开水,螺肉放进去,等水再次翻花后半分钟拿出来,马上放到冷水里,这样切出来的螺肉口感会脆.
然后利刀切薄片,白的圆蘑菇切片,红色的辣椒切丝(配色的)
大量的蒜切碎.
用葱姜蒜暴锅,放蘑菇片辣椒丝,炒的差不多了,放螺片,加料酒,翻炒的很快就出国,放盐.
这个要掌握火候,螺片越薄熟的越快,熟了就马上出国,不然会老的.

多谢qiuyue夸奖,脸红一下,我就会做这么几个,是自己爱吃的,所以才琢磨...
因为准备不杀生了,所以不买活的了,现在都是买大统华的冻螺头来做,也不错,有空你试试看

记得吃黄泥螺时,总要将螺肉从“道场”里用针(饭店里好像是牙签?)挑出,好把靠螺尖有一段去掉。可是看你们烹调螺时从未提及从里面去掉什么~~~~

螺肉尖那里是肠子,要去掉的,不过买来的田螺肉已经处理好了,直接下锅就可以.
海螺肉在后背上摸上去很软的地方开刀,里面是红色的心和两个黄色肉蛋,全部清楚干净就可以了.
